The crust is soft with a center that is easy to fold and bubbly charred edges. Made with ''00" pizza flour along with water, sea salt, and yeast. Cooked in a wood-fired oven for 60-90 seconds. The pizza is served "Al Portofoglio"-Wallet Style or served whole and then cut with scissors.
